Miriah Leaf Amaranth is a gorgeous heat tolerant annual leafy green. It can be used raw in salads, cooked, or pickled. The leaves have a pleasant, mild taste similar to spinach, but they are thinner and not as crunchy as spinach. It is popular in Asia and Latin America, and is sometimes called Callaloo in the Caribbean where it is used to make a soup or stew of the same name.

The centre of each leaf is magenta, and the underside of each leaf is even more vibrant. It looks amazing in a salad mix!

Miriah leaf amaranth is heat and drought tolerant once established. It kept thriving throughout the very hot weather (40°C/ 104°F) we had this year. This is not a variety for grain as the seeds are black.

These plants can reach over 6 feet tall in a summer! Amaranth belongs to the C4 group of plants, which means that they are better at conserving water and more efficient at photosynthesizing in high temperatures compared to "regular" (C3) plants. Other C4 crops include corn and purslane. I suspect that C4 crops will become of greater importance as our climate warms.

Growing Instructions

Sow indoors in April for transplanting in May. Or direct sow after danger of frost. Space plants 12-18" apart.
