Black Salsify is a perennial vegetable with edible roots, leaves, and flowers. It’s a workhorse in the garden! The leaves can be harvested lightly in their first season, and then the roots harvested in the fall. Or let the plants overwinter and harvest even larger roots the following fall.
The roots are delicious! Peel and slice the roots, then steam and pan-sear. They taste like tender new potatoes with the creamy texture of a sweet potato. The skin can be a bit bitter so make sure to peel. I can see Black Salsify easily fitting into many different recipes- try using in place of potatoes.
I am very impressed with the massive roots it grows, and its ability to grow straight down into heavy clay soils! I was awestruck with the thick, gnarly roots when I dug the first one up. I’ll be using these similar to tillage (daikon) radishes in my garden for loosening up compact soils. And of course eating them!
Black Salsify is an excellent choice for a perennial permaculture garden.
